Poached Eggs, Avocado, and Lemon on Toast Recipe

Since being in Bali I have had so much healthy and delicious food.  One of our favorite cafes, Sea Circus serves such simple  food that taste amazing.  As you may have read here  I am not a breakfast kind of girl, but I know I have to eat it anyway.    They serve a simple open sandwich that I craved daily and now I’m sharing the recipe with you.

Less then 250 Calories and really filling!

Think Thin Tips

Go for a multigrain bread instead of white

What You need

1 Piece of Bread

1 Poached Egg

1/2 Avocado

1/4 Lemon

Salt & Pepper to taste

 

What to do

There is definitely and art to poaching an egg so follow these detailed and simple instructions.  While your egg is finishing being poached lightly toast your bread.  Spread the avocado on the toast and place the egg on top.  Finish with lightly squeezing lemon on top.

There you have yourself a deliciously healthy breakfast.
