Pork Chops with Fig Balsamic Reduction Recipe

As my Valentines to you I am sharing one of my favorite go to recipes.  It’s my go to when guest come over.  My go to on a weekday night.  This year it’s my go to for a Valentines celebration with our girls (they L.O.V.E. it).  The recipe comes  from a dear friend and client who we refer to as, “Martha.”  Besides being beautiful everything she cooks causes my husband to do this annoying groan in delight.  This is one of the few recipes she has passed down to me that I have finally mastered.

With less the 350 calories for the pork chop your Thinking Thin really is all in the sides.

 Pork chops with Fig Balsamic reduction

Prep Time- 2 minutes
Cook Time- 10 minutes

 

What you need
4 Bone in Pork chops  (Bone-in Pork Chops are much juicer and flavorful)
Salt & Pepper to taste
2 Tablespoons oil
1 Tablespoon butter
3 Table Spoons Balsamic Oil
2 Tablespoons Fig Jam

How to make it
Salt and Pepper both sides of the pork chops.  Sear them on medium high in olive oil and butter for about 3 minutes on one side and 2 minutes on the other.  Remove them from the pan.  Add the balsamic and fig jam to the pan with all the good brown bits and reduce a bit.  Pour over the top and you are goddess.

 

For the sides I roasted Asparagus with salt, pepper, and olive oil.  The Pear, Augula salad I made can be found HERE.

    Made this for Sunday night dinner and it was amazing…easy and fabulous, my teenage son loved it as well….this will be a regular for sure!
